There is a updated version on the net: http://cwdohnal.home.mindspring.com/utglr/ This site is primarily about a UT OpenGL renderer, but there is also a updated version of the OpenGL renderer. Just overwrite the one after updating Deus Ex to version 1112fm.
You probably also have to manually edit the DeusEx.ini in the System directory. The new renderer has a lot of new options that can be interesting for a recent system with a powerful gfx card. You can also change the resolution of the renderer there. This isn't possible in-game. I also experienced this, the resolution I can select in-game is 32bit 800x800, nothing above.
I only have a fullscreen problem (and a sound skipping problem that can be fixed by reducing CPU clock) when starting Deus Ex directly in wine. Then I still have both xfce panels displayed at the top and bottom of the screen. I just start a emergency X-session (it uses twm). Then I have no trouble at all.
